Soup & Starters

So many of our customers have said that their left over veg becomes soup at the end of the week that I thought all the rest of you might find this useful too. Virtually any vegetables can make a great soup. Add a bit of seasoning, a bit of stock, it'll even freeze if you're ever developing a bit of a stock pile!

The basic principles for most are the same

1. Fry the onion

2. Add Garlic

3. Add the other veg (e.g. potatoes, leeks, roots, greens a bit later) and fry for a bit. You can also throw in lentals at this stage.

4. Pour in some stock (plus a drop of milk for a richer soup or a tin of tomatoes for a tomatoey one)

5. Simmer until the veg s tender

6. Add any quick cooking ingredients you've got in your packets & tins cupboards (e.g. chickpeas, pasta, tomato puree)

7. Blend if you want to (but not if you've added pasta!)

8. Season

9. Serve

10. Dollop on any toppings you like (e.g. grated cheese, creme fraiche, blue cheese, toasted seeds)
